Created a book called:  The Kid Friendly Food Allergy Cookbook...
and in its well worn pages contain some of my favourite recipes for my family. 
They are easy to create and contain ingredients that are always at hand. 
I have yet to have one recipe that didn't really work well. Best of all, my kids like the food. 
They are excited to eat it and cheer when it comes out of the oven... 
That is really what cooking is about for me. 
 The cheer factor!  That something is so good they would eat it every day if they could...

So, here is one of the recipes -- altered to suit my family --

Pancake Torte (we call it a Puff though)

You need a blender for this recipe to work well... a food processor doesn't really do the trick...

2 cups milk (I have also used soy milk)
1/4 stick butter (I use Earth Balance)
1 c rice flour
1/4 c agave nectar
1 package of stevia (I use Sweet Leaf)
4 eggs
1/2 cup unsweetened coconut
1/4 cup flax seeds or almond meal
1 1/2 cup of frozen berries 
I have also used Fresh Pears, apples, cherries....  the apple and pear... great with a sprinkle of cinnamon on top of the fruit....

Put all of the ingredients minus the fruit, flax seeds, and coconut in the blender and whiz until totally smooth and foamy. 

Pam a 9 by 11 pan
Arrange fruit on the bottom and pour the mixture in. Sprinkle the coconut and flax on top 

Put in a 350 oven for 40 min or so...  cook until light brown on the edges and the centre is set...

There should be three layers -- a crust, middle custard, and a crackled topping... very tasty.

Cool slightly and then serve!

Honestly one of the best books for easy kid friendly ideas that are inclusive of many allergies not just gluten... There are always alternate directions to leave out dairy, sugar and eggs if the recipe can handle that.
