We recently attended a potluck at a friends house. I am very lucky that my friends are aware and vigilant for my health -- So everything was gluten free. The food was a simple Mexican Feast - and I was struck with the fact that such simple food can be amazingly satisfying!
Simple but really awesome food is the basis for living life gluten free and loving it! Many chopped veg. healthy and wonderful in a taco shell or on my cheesy chips!

To that end here is one of the recipes to help make your own Mexican fiesta:
Mexican rice ( To make it more diabetic friendly... use quinoa! Awesome!)
3 tbsp olive oil 1 medium white onion, diced 3 cloves of garlic, minced (or 1/2 tsp garlic powder) 1 tsp red pepper flakes (more if you like it spicy... less if you don't) 1 tsp ground cumin (I ground my own, because all I had were cumin seeds) 1 cup uncooked, long grain white rice 2 cups of chicken broth 1 small can of tomato paste
Heat oil in large saucepan over medium heat and add rice. Cook, stirring constantly until rice is golden. Sprinkle browned rice with cumin then stir in onions. Cook until onions are tender. Stir in chicken broth and tomato paste, and red pepper flakes, bring to a boil. Reduce heat to low, cover and simmer for 20 minutes. Fluff with fork and serve
