Now that you have over 200 meatballs in your freezer...  what do you do with them?  I am not a big fan of spaghetti and meatballs preferring a meat and veg sauce...  but it is one thing that you can do with them....  Here are some of my favourite recipes that involve the amazing meatball!

 Sweet and Sour Meatballs:  Sinclair Family Recipe

True story.  I met my one and only man while he was dating another gal.  Gasp!

I was not looking for a relationship at the time but I guess fate and cupid had other plans!  There was this girl who was really sweet - and would often talk about her man when we saw each other - not always kindly but was overall a very sweet gal and he seemed nice.  I came over for coffee one day, at her request, and met the man...  He was such a bohemian with hair longer than mine...  being interested was the last thing on my mind...  but SHE had other plans.  It had been over for a while with them and she was looking to move on and move out...  She actually introduced us and took us on our first date!  We have lost touch over the years but she remained her sweet self during our dating times and was even invited to the wedding!  So, for our wedding present ,I was absolutely thrilled when she passed on the Sinclair Meatball Recipe from my husband's mother, Carol...  It is very forgiving and always good!  And yes, we are still married 18 years and counting!


Here it is!

3 Tbsp Brown Sugar
1/4 c vinegar
3 Tbsp corn starch
3 Tbsp prepared yellow mustard
1 can of tomato sauce
1 tsp ginger
Salt and pepper to taste
 
Pour over meatballs and reheat to bubbling... serve over rice or quinoa!

Pineapple Asian Meatball Sauce - 

No cool story on this one.  Just something I threw together that worked really well and I remembered to write it down.  Enjoy!

1 Cube of Beef Bullion
1/2 c coconut sugar
2 Tbsp corn starch
2 Tbsp Bragg's Seasoning
2 Tbsp Cider vinegar
1/2 c Water
1 can of pineapple tidbits with juice
1 tbsp Siracha sauce (aka chicken sauce)
1 Tbsp ginger sesame spice from Silk Road (optional - you can just use some ginger and a touch of garlic)

Blend it all together and pour over the meatballs... serve with noodles or rice

If you are really short on time:

Some of the other things I have done - 
 
  •  BBQ sauce dumped over frozen meatballs and them nuked until they are warm
  • 1 cup of ketchup or chili sauce and 1/2 jar of grape jelly (DH's aunt made this for us one evening).  They seem odd but it does work well.
  •  If you have left over gravy -- that is awesome... if not make some with some beef broth and roux.  Add your favourite spices and you are good to go!
