This is the flour blend that I have found works really well for me...  Makes a fair amount...  


PS - If you don't have a scale yet!  Go invest in one!  It is so much easier to bake to weight -- measuring becomes a dumping it in affair -- and you are accurate!  Same results every time...  That is what I call baking!!!  I just use a cheap scale that I bought for $10.00 at Walmart...  It is digital, zero's out, and converts to different units.  If I were to buy another one - I would also look for one that was a bit easier to clean!   Mine is two parts... look for one that is just one for ease of cleaning.  You don't have to spend a fortune on a scale.... you just need one that does the basics.  

Here's the flour:

300g brown rice flour
350 g white rice flour
200 g tapioca starch
300 g sweet rice flour
4 tsp xantham gum
500 g sorghum flour
100 g coconut flour
200 g buckwheat flour

Blend in a large container... remember to shake it up before you start to bake -- these flours do settle out at different rates...  shake it up for best results...
