Cookies.... Sometimes ya just gotta have 'em. This are kid approved! And not so bad for you after all.... Both are drop cookies - although the ginger molasses - you can roll them if you like...
Double Peanut Butter Cookies!
1/3 c golden crisco (I know I know -- I have also used Earth Balance) 2/3 c Peanut Butter - I use no name smooth 1 1/2 c of brown rice flour 1/2 c agave syrup 1/2 tsp soda 2 tsp baking powder 1/2 tsp salt 2 tsp vanilla 1 tsp xantham gum 1 box reese's pieces Preheat oven to 325 and use some pam... or parchment...
Combine shortening, PB and rice flour... Mix until fluffy
add the rest and mix the dough is soft.
Drop by tsp full -- press with a fork!
Bake for about 8 minutes - edges with brown a bit...
Let cool before you try and move them or they will explode.... waiting is the hardest!
Ginger Molasses Cookies
1/3 c golden crisco 1 3/4 c brown rice flour 1/4 cup agave 1/4 cup molasses 1/4 tsp soda 1 tsp baking powder 1/2 tsp salt 3 tsp ginger powder 2 tsp xantham gum
These decorate amazingly after the fact or you can sprinkle with some coloured sugar... or do both as my daughter decided!
Oven: 350 F Pam your cookie sheet Beat your shortening and flour first... then add the rest.. remember to scrape the bowl on this one...
If you want to roll the dough - put it in the fridge first for about an hour
If you want round cookies! Drop by the tsp - press with a fork and bake for about 9 min.
Let these cool a bit before removing them... Cool totally before icing... enjoy!!!
