I redesigned these for a good friend of mine.  They had to be easy - and convert into a mix if needed.  I think these are pretty good.  They need a bit of testing to be perfect but they come pretty darn close!  This will be the first mix offered.

Preheat Oven to:  375F
Line 2 a cookie sheets with parchment paper

Makes 24 cookies
 
Ingredients:

1/2 c coconut oil ( or butter if you like)
1/4 c molasses
1/4 c whey protein isolate
1/2 Tbsp cooking blended Stevia
1 tsp vanilla
 
Blend together until soft and creamy with no bits of coconut oil (or butter) visible.

Measure your dry ingredients into a bowl:

120 grams of quick cook gf oats
150 grams of my blend flour or
  • 45 grams sweet rice flour
  • 75 grams brown rice flour
  • 30 grams tapioca starch  
1/4 tsp xantham gum
1/4 tsp salt

1 c chocolate chips
1/2 cup dessicated unsweetened coconut

To the coconut oil blend add:

1/2 tsp soda 
2 Tbsp HOT coffee (you can use HOT water)

Blend for 30 sec

Add dry ingredients

Blend until incorporated on low.

You can add 1/2 Tbsp fresh ginger if you like (I liked the addition the kids were not so sure)

Use a cookie scoop or two spoons to measure out your dough.  Place about 3 cm apart.  Press out gently with a fork.

Bake for 8 min.

Cool on sheet for 5 min before moving to a cooling rack to cool completely.
