1 1/2 cups Bob's Red Mill all purpose gluten free flour
1 tsp soda
1 tsp baking powder
1 tsp xanthan gum
1 tsp pumpkin pie spice
1tsp cinnamon
1/4 cup ground flax
1/2 cup milk 
1 large egg
1/4 cup oil
1/2 cup whey protein isolate - I use Vanilla flavoured
1/4 cup agave nectar
2 tsp lemon juice
1 cup shredded carrots
1/2 cup pecans (if you like)

Directions:

Preheat oven to 350 F
Spray and line a loaf pan - If you hang it over both edges it is super easy to remove
Sift flour, soda, powder, gum and spices, whey protein isolate, ...  put aside

In a pyrex measuring cup:

Measure out your milk and add the flax to create a gel...  let this sit until slimy.

Then add the eggs, oil, agave, lemon juice,  

Add the dry to the wet ingredients and mix thoroughly but gently - being cautious to not overmix. Fold in carrots and nuts if using.


Pour into loaf man (or muffin tins if you prefer)

Bake for about 60 min for loaf or 20 for muffins.
