I love eating meatballs.... I hate making them.  So, when it comes to the meatball, I make a lot so I don't have to do it very often!  Having the little balls around makes for quick suppers and happy kids!  The suggestions for what to do with the frozen meatballs is almost endless - sweet and sour, chili sauce, bbq in the slow cooker, meatball subs, spaghetti sauce, Asian noodles with meatballs...  Italian wedding soup...  Almost endless.  This are very basic meatballs so that you make them into all the of the above... Don't get trapped into one spice because then that is all they can do.  Stick to the basics!

Oven Meatballs - Large Recipe

10 Lbs ground beef
5 cups of gluten free quick oats
1/4 cup of garlic flax seeds (or flax meal if you don't have Omega Crunch)
2-3 small onions - pureed in food processor
4 Tbsp St Laurent Steak Spice (or any steak spice you love will work)
In a separate bowl beat together:
10 eggs
2 cups milk

Mix the meat mixture together loosely then add the egg mixture.  Make sure you have a large enough bowl as you have to kneed this together to fully incorporate the entire mixture.  

I use a small trigger scoop to rough out the balls then hand roll them to make them round.  Using a scoop will ensure that all your meatballs are the same size.  This is vital as they are baked and having a bunch of sizes will not assure that they are all cooked through.  Aim for them to be the same size.  

You can pack them tightly on a foil lined baking sheet.  I fit 54 per sheet!

Bake them for about 30 min at 375F

Cool them and then pack them in containers (or ziploc bags) in servings appropriate for your family.

It makes about 230 meatballs depending on your size.
