I know.  It is a departure for some to consider the bean as a valid ingredient in cookies but just think!!  We have been way ahead of the pack by using bean flours to make lots of stuff!  These are really tasty and tender morsels of yum.  It does make an insanely large batch but they would freeze well.  Thanks Dallas for the amazingly awesome recipe!

Eat Real, Be Real, Be Happy!

 Bean Cookies (makes a really large batch!)
  • 1 cup white navy beans
  • 1 cup sunflower oil
  • 2 1/2 cups prune juice
  • 1 tsp vanilla
  • 2 cups dates
  • 4 cups quick oatmeal or quinoa flakes
  • 2 cups raisins or chocolate chips
  • 2 1/2 tsp baking soda
  • 1 tsp salt
  • 1/3 cup cocoa
  • 3 eggs
  • 4 cups brown rice flour
Puree beans with sunflower oil, 1 cup of prune juice and vanilla.
In a saucepan, combine remaining prune juice and dates and simmer until the dates are plump and soft. Puree with the bean mixture.
Add the rest of the ingredients to form a dough (add the flour 1 cup at a time). Drop dough by tbsp on cookie sheet and flatten with a fork. Bake at 325F for 12 minutes (I may have left mine in longer...).
