3 Tbsp Oil 
3 Vidalia Onions
2 Granny Smith Apples cut into small chunks
1/2 cup cooked quinoa (cook 1/4 c quinoa with 1/2 c water if you don' have leftovers)
1/2 cup Ground Almonds
4 Chicken Breasts
1 1/2 cup broccoli
Sea Salt
Pinch on Herbs de Provence

1.  Saute Onions and apple until onions are translucent.  
     Add almonds and spices and cooked quinoa.  Saute briefly to release aroma...
2.  Spray a casserole dish with Pam.  Put almond/onion mixture in the bottom
3. layer on broccoli (I have also used spinach...  very tasty)
4. In the same pan.  Brown chicken
5. Put chicken on top of and around the broccoli
6. Deglaze pan and add a bit of potato starch to thicken if you want. Pour thickened juices over top
7. Cover and bake until chicken and broccoli are done.
